Coconut flakes used in baking cakes come in two types: Sweetened and Unsweetened. To begin with, Sweetened coconut is moist and used when a sweet coconut taste is desired. On the other hand, unsweetened coconut has a stronger taste and is drier, adding a crunch to cakes when chocolate or fruit is used. All in all, both types of coconut can be used interchangeably to add a tropical flavor to baked goods.

Coconut cake is an utterly delightful dessert that is bound to tantalize your taste buds and leave you craving for more! This homademade air fryer coconut cake dessert recipe is made from scratch and its spongy tasty, soft and fluffy.

Ingredients

  • 1 Cup All purpose flour 125g

  • 2 Eggs

  • 7 Tablespoons Sugar

  • 1/2 Cup desiccated or shredded coconut

  • 6 Tablespoons  Soft butter

  • 6 Tablespoons  or Whole Milk 

  • 1 teaspoon Baking Powder

  • 1 Teaspoon Vanilla Extract

  • 1/4 teaspoon Salt( adjust quantity base on your taste)

Directions

  • 1. Preheat your air fryer to 350°F or 175C° for 5mins. My Air fryer is 5liter size basket.
    2. In a large mixing bowl, combine the butter and sugar together  with a spatula and whisk until light and fluffy.
    3. Add the eggs and whisk well.
    4. Sift the flour, baking powder and salt into the bowl and fold in gently
    5.  Add the milk and vanilla extract and combine with a spatula until well combined.
    6. Add Shredded coconut and fold.
    7. Grease a 7-inch cake pan that fits in your air fryer and pour the batter into the pan. Sprinkle a some shredded coconut on the top
    8. Place the cake pan in the pre heated air fryer and Air fry at 340°F or 170C° for 35-40 minutes, or until a toothpick inserted into the center of the cake comes out clean.
    9. Let the cake cool in the pan for 5 minutes, then remove it from the pan and let it cool completely on a wire rack.
